Spring Fling at the Abbey Winery

New releases of reserve wines will be paired with elegant cuisine at The Winery at Holy Cross Abbey's annual Spring Fling, held the last three Thursdays in March.

This Thursday will feature the release of the 2008 Colorado Cabernet Sauvignon Reserve. Chef Adam Merlino of the Merlino's Belvedere Restaurant will kick off the festivities on March 11th, pairing 2008 Colorado Cabernet Sauvignon Reserve with a mouth-watering menu that includes such exquisite culinary delights as tartine of pork and tiramusu.

Admission is $5.00 per person and includes a commemorative logo glass. Advance purchase is recommended, as tickets are limited. The event runs from 4-7 pm. The winery tasting room is located at 3011 East US Hwy 50 in Cañon City. Tickets may be purchased at the tasting room or call toll free 877-422-9463.

On Thursday, March 18th, the 2008 Colorado Merlot Reserve will be released with specially chosen pairings by Chef Sharon Cosat of Beyond Madness Catering, and on Thursday, March 25th, Chef Han Son of Mo-Mo Japanese Restaurant will pair his amazing Japanese cuisine with the 2009 Sauvignon Blanc Reserve.

 "This is a great opportunity to make the first offerings of these wines to our loyal customers in Southern Colorado", says Cookson. "They've put us on the map, and we like to give back in every way we can".

During the events, the winery's production facility will be open for a very special barrel tasting of the 2008 Colorado Syrah. This vintage follows the award winning 2007 Syrah, which sold out in only six months. Futures of this amazing wine will be sold during the events at a discounted price.
